Hot dogs are near the top of my list of guilty pleasures. I love experimenting with all kinds of toppings, and have been occasionally known to throw just about everything in my fridge on top of a nicely charred hot dog. So this Thai-inspired version from TK member Serena was right up my alley.

The cucumber-mango slaw certainly intrigued me, but I have to admit, it was the homemade Srirachup that caught my eye. Srirachup. I just love food name mashups that can make you instantly imagine the flavors involved. And I’m already dreaming up all kinds of other applications for it. Burgers. Fries. Potato chips. Eggs. Fried chicken. Pizza. (Half kidding on the pizza.)

Thanks for sharing the recipe, Serena! If you have plans for the grill this weekend, try this Asian twist on the hot dog. Then make extra Srirachup and wait for everyone to ask you what that amazing condiment is called. It’ll be loads of fun, promise.

Cookie Butter Granola

If you have not yet tried cookie spread, this is the perfect way to get started. That is, if you’re interested in doing something with it besides eating it with a spoon—my chosen method of consumption. This Cookie Butter Granola from TK member Justine is packed with nuts, hefty oats, and protein-packed peanut butter, making it practically a health food! Justify this however you must, because it’s a winner that you have got to try!

This recipe comes together very quickly, using only two bowls and one baking sheet. Recipes with little clean up are definitely a win.

In a large bowl, stir together the oats and the chopped nuts. Set aside momentarily.

In a smaller bowl, whisk together the cookie butter, peanut butter, brown sugar, and honey.

Once it’s smooth, pour it into the oat and nut mixture and stir together.

If the mixture is too tough to mix with a spoon, use your hands.

Then pour the mixture onto a non-stick baking sheet. Smooth out the mixture and bake in a pre-heated oven.

Once it’s out of the oven, let it cool before handling it. Then break apart any large pieces of granola and save in an airtight container.

Description

Cookie butter and oats come together in this delicious and extremely addictive granola!

Ingredients

  • 4 cups Old Fashioned Oats
  • 1 cup Cashews
  • 1 cup Sliced Almonds
  • ½ cups Cookie Butter
  • 2 Tablespoons Peanut Butter
  • ⅓ cups Light Brown Sugar
  • 2 Tablespoons Raw Honey
  • ½ teaspoons Fine Sea Salt
  • ½ teaspoons Ground Cinnamon
  • ⅛ teaspoons Ground Nutmeg
  • ⅛ teaspoons Ground Cayenne Pepper (optional)

Preparation Instructions

Preheat your oven to 325 F and line a large lipped baking sheet with parchment paper or a silicone baking mat. Set aside.

In a large bowl, combine the oats, cashews and almonds. Stir until thoroughly mixed.

In another small bowl, whisk together the cookie butter, peanut butter, brown sugar, honey, salt, cinnamon, nutmeg and cayenne pepper (if using) until smooth. The cayenne pepper gives it a nice kick, but if it’s too much for you, just eliminate it.

Stir the wet ingredients into the dry ingredients, until all ingredients are evenly dispersed. Pour the mixture onto your prepared baking sheet and even it out into a thin layer. Press down on the granola to compact it.

Bake at 325 F for 25 minutes. Remove pan from oven. Stir the mixture and press down once again. Bake for an additional 15 minutes or until the granola is golden and solid.

Remove from oven and let it cool completely on the baking sheet, then break into chunks and store in an airtight container for up to a month.

Serve with fruit, yogurt, a drizzle of honey or all by itself! Enjoy!

I know summer isn’t officially here yet but I think the sun and the grass and the warm air outside didn’t get that memo. So the temperature continues to rise, the sun continues to shine a bit more intensely, and when that happens, the last thing I want to do is fire up the stove or oven and add to the ambient heat in the house.

Today’s Kitchen Talk is all churning out great meals and snacks while still keeping our homes nice and cool, and ourselves sane. So tell us:

Do you have any favorite no-cook or no-bake summer recipes?

Maybe you have a favorite main dish salad that requires no (or very minimal) cooking. Great chilled dessert ideas (like Ree’s Raspberry Cream Pie above). Killer sandwich combinations. Or a new favorite smoothie concoction. Whatever you have that doesn’t require massive amounts of heat, share with us below—and include a link if you have one!

Smoothies are a great breakfast (or snack) option any time of the year, but especially in the summer when everyone’s home in the morning and you just want something cool and refreshing—and nutritious—to start off your day. The fact that it takes just minutes to throw together is a nice bonus, too.

For those of us who regularly enjoy smoothies though, it’s easy to get into a rut and make the same smoothies over and over again. Not that there’s anything wrong with that, but if you’re like me, you’re ready for new ideas. So tell us:

What are your favorite smoothie tips or recipes?

I’ll start us off. I love adding a tablespoon or so of almond butter to my smoothies to add a nice and rich nutty flavor. When I need a boost of sweetness, I throw in one or two dates. And any bruised or nearly-overripe fruit gets washed, cut up, and thrown into the freezer for my smoothie stash.

How about you? Any tips or tricks for smoothie-making? Secret ingredients? Or if you have favorite recipes, shout them out below and let’s expand our smoothie repertoire!
