Some things are considered breakfast staples, like pancakes and waffles, toast, bagels, hash browns, bacon or sausage, and oatmeal. My favorite is the egg. It’s such a versatile food and I love it in so many different ways: egg salad, deviled eggs, quiche, or just plain fried, boiled, poached, you name it.
Eggs are an easy breakfast choice, but for all their versatility, it’s also easy to get into a rut and make the same thing over and over again. So this is where you come in! Tell us:
What are some of your favorite ways to prepare eggs for breakfast?
My go-to has usually been a fried egg (runny yolk please!) on a bed of fried rice. I vary the flavor of the fried rice so it always tastes like a different meal. But I’ve been wanting to make those Baked Eggs in Spicy Tomato Sauce you see above, so maybe this weekend, I’ll finally crack. (Ha.)

My water aerobics buddy & I stop at Braums at least once a week for breakfast – mine is egg, ham and cheese on a toasted bagel.
I also like to make a mini frittata with a couple eggs and whatever is in the fridge (cheese, mushrooms, peppers, onions, tomatoes, etc). While it cooks, I read the newspaper, do the puzzles and enjoy the coffee.
For dinner, there is nothing like corned beef hash with a couple eggs on top.

My favorite “huevos con migas” (eggs with tortilla crumbs) a delicious mixture of scrambled eggs, corn tortilla strips, onions, tomatoes, chile peppers and herbs topped with the salsa of your choice yummy! followed by my second choice: Huevos con chorizo (chorizo eggs) a delicious concoction of scrambled eggs and Mexican chorizo oh so good.

For a delicious, filling and portable breakfast I make a bacon, egg and cheese sandwich on a lightly toasted, buttered bagel. My kids used to love adding hot sauce to their sandwiches.

Love fried eggs over easy on Saturday mornings with crispy edges, runny yokes, with some good toast or hashbrowns to mop up with!
I also love taking leftover diced ham, shredded cheese, leftover veggies, maybe some diced olives, and put in a glass pie pan, whip some eggs and pour over all these yummy things and bake til firm for a yummy dinner quiche without the crust!

I love reading everyone’s favorites! I must admit that I’m not very creative with my eggs. They don’t really appeal to me early in the morning, but they sure are good at lunch or supper. I really like a fried egg on top of rice with lots of butter, some peas and kimchi. Which is what I had for lunch today. Sometimes I add soy sauce and sriracha.

Love Eggs-in-the-Hole! But I also make a cheesy Amish casserole that is wonderful and a good scrambled egg sandwich (with ketchup) can’t be beat!

Eggs Benedict or Eggs in Purgatory are my favorites but I rarely make them due to the time involved. Most mornings I rely on hard boiled eggs that I have boiled and peeled ahead.

My absolute favorite is poached egg on buttered English muffin. I liked fried egg sandwiches (just the egg on plain bread, please). I make a casserole with eggs, bacon, and onions that my family loves. I don’t make these, but my mom used to make soft-cooked eggs served in the shell with toast strips for dipping, and they were so good.

My favorite is fried, over-easy, runny yolk. Since I don’t eat bread, I REALLY miss dipping my toast in the yolk, but occasionally…
I like to change them up because I have them every morning for breakfast. Scrambled lightly, baked, soft boiled, stradas…eggs are like vanilla, you can do so much with them.

I like 2 soft fried eggs over halved squares of fresh, warm cornbread. I put butter & jelly on another half square, lunch doesn’t happen, a nap usually does.

I don’t make it often because it’s so caloric, but Ina Garten’ s baked egg dish is amazing! It’s just eggs baked in some cream, with salt and pepper.

My most favorite egg dish is eggs benedict. Next is what my family refers to as Red Eye. This is basically a country hash made with red potatoes, green pepper, and onion. Topped with eggs over easy, shredded cheese, and salsa or hot sauce.

My go to is scrambled eggs topped with a healthy dose of sriracha. My husband loves omelets, anyway I feel like making them. I love reading what everyone else makes – might have to switch it up a bit in the morning. Loving the idea of fried rice topped with a fried egg.

Egg omelet sauteed with onions and mushrooms, and filled with swiss cheese or goat cheese.
My next favorite would be scrambled eggs with cream cheese stirred in at the last minute or two.
But my go-to is fried egg on toast with cheese.

Egg omelettes are the first thing I ever learned to cook as a child. Now that our household has to be egg-free due to allergy issues, I can only fondly reminisce about the days of Sunday brunches and quick weeknight omelette dinners made with eggs, whatever leftover meat we had on hand, onions, and veggies from the fridge or freezer… perhaps with a dash of hot sauce on top…

During the weekends we slow down a bit for the runny eggs and full blown breakfast but during the week my husband is running so I soft scramble his eggs…this morning with English muffin & ham. VARIETY IS THE SPICE OF LIFE!

We like what my mom calls “Dippy Eggs” which are just soft-boiled eggs in the shell, put in an egg cup, and dip toast strips in it!! When the kids were little they didn’t like it when I cleaned out the shell for them to eat, but now that they are grown up, they clean out their own shell!! Other things I really like for breakfast are steel cut oats….mmmm Cook in the crockpot on low overnight—couldn’t be easier.

I use 4 slices sourdough bread…bacon… provolone cheese some shaved
Parmesan… green onion…fried egg must be runny… you can also add some fresh
basil or arugula leaves…dress it up however you want…

I love eggs with a runny yoke. I made Eggs in Purgatory for the first time and LOVED it with a piece of crusty bread. This reminds me of Eggs in Purgatory. I will add the Goat Cheese next time. Yum.

My go-to Sunday breakfast is a fried egg on a piece of buttered whole grain or rye toast. But I have a special place in my heart for what my Mom used to call Eggzntoast. Of course, she was saying “eggs and toast”, which consisted of one or two soft poached eggs (runny yolks are critical in this dish) in a bowl with a piece of buttered toast broken up and mixed in. Add some salt and pepper and it’s the most delicious thing.
Any time I was home sick from school I asked for Eggzntoast for breakfast and Lipton chicken noodle soup (from a box, no can please), saltine crackers and Tom Tucker mint ginger ale for lunch. All these foods seemed to make me feel better then, and now the nostalgia of eating them does the same.

I love any kind of egg paired with a slice of nice bread. We used to make egg sandwiches with English muffins a lot (simply a fried egg, a slice of yummy cheese and a toasted, buttered English muffin), and a simple fried egg (crispy edges is what I like!) with garlic powder, salt, and chives on a breakfast roll is what we have for breakfast most weekends.
A really nice surprise is a slow-cooked boiled egg! Boil an egg at about 158°F/70°C for 11 to 25 minutes and see if that isn’t the best tasting egg you’ve ever had! It’s really amazing what the low temperature does for the taste and consistency of the egg. After 25 minutes, the yolk is firm, while the whites still have some nice poached-y softness to them.

From the minute Ree posted about it, my favorite egg breakfast is Egg in the Hole! With a side of bacon, of course. Put enough butter on the toast, and this breakfast is not only delish, but holds you well until lunchtime.

We live just outside of San Antonio, so breakfast tacos are our go-to. Chorizo and egg, chorizo and refried beans, my husband’s delicious fried potatoes in a tortilla (carb overload!), bean and cheese. . . .possibilities are endless and all yummy!

I like to scramble an egg and saute some fresh spinach (in olive oil, salt and pepper) and serve on a piece of sourdough toast!

I feel that breakfast is the most important meal of the day! Our family loves egg bakes, mini frittatas, omelets, breakfast burritos, the absolute favorite is pancakes and waffles!!! Very seldom do we have cold cereal. Oatmeal or Overnight Oats are good as well. Variety is the norm for us. Egg salad is more of a lunch option than a breakfast item for us. So everyone egg it up!
