Have a group to feed at breakfast? Unexpected company? This breakfast casserole is great for brunch, and the best part…you make it the night before, cook it the next morning, and have one dish cleanup after breakfast!
Cook sausage until browned, drain well. Crumble it into a lightly greased 9x13x2 inch baking dish.
In separate bowl, combine eggs and milk, mix well.
Add soup, mushrooms, rice, and dry mustard to the egg mixture. Blend well.
Pour liquid over the sausage, distributing rice as evenly as possible.
Cover and refrigerate overnight or at least 8 hours.
Remove from fridge and bake covered at 350 degrees for 35 minutes.
Remove cover and bake an additional 45 minutes.
Sprinkle cheese over the top and bake another 5 to 10 minutes.
You can use half of the cheese in the egg mixture, and half on top, if desired. Serves 8 to 10.

Should the rice be cooked or uncooked. I think I’ll try this recipe for a get-together next week. Thanks!

Picture coming soon, on all my recipes. My dear 5 year old decided my camera was a ball and could be thrown, so it will be just a bit.
If anyone else who makes this would like to send me a picture in the meantime, I’d be grateful!
