Description

Creamy white bean and walnut mousse that goes great on bread for a delicious low calorie breakfast or snack.

Ingredients

  • ½ cups Cooked White Beans
  • ½ whole Lemon, Juiced
  • 1 Tablespoon Walnut Oil
  • ¼ cups Walnut Halves, Crushed And Roasted
  • 1 whole Medium Scallion (finely Chopped)
  • ½ teaspoons Sea Salt
  • ½ teaspoons Green Peppercorn (ground)

Preparation

In a medium-sized bowl, blend beans, lemon juice, and oil to make a puree.

Once puree is smooth, add roasted walnuts, scallions, salt, and pepper. Mix until combined. If mixture is too firm, you can add a little bit of water.

You can serve this immediately, or store it in the fridge. Enjoy!
