Description

A delicious vegetarian dinner to use up the stuff in your CSA box.

Ingredients

  • 3 Tablespoons Grapeseed Oil
  • 1 whole Onion, Diced
  • 1 bunch Swiss Chard, Stems And Leaves Separated
  • 1-½ cup Arborio Rice
  • ½ cups White Wine
  • 5-½ cups Vegetable Broth, Heated
  • ¼ cups Raisins, Soaked, Drained, And Chopped
  • ¾ cups Parmesan Cheese, Grated

Preparation

Heat oil in a large stock pot. Saute onions until caramelized. Add chard stems and rice and saute 3 minutes. Add white wine and stir until evaporated.

Add chard leaves until wilted, about 3 minutes. Add 1/2 cup heated broth, stir until evaporated. Continue adding broth in 1/2-cup increments until rice is al dente. Stir in raisins until incorporated.

Remove from heat and stir in 1/2 cup parmesan cheese. Serve individual plates with remaining cheese.

Pretty good – the mixture of sweet (raisins) and salty (parmesan) is good. I also threw in a bunch of zucchini (because it was taking over my kitchen) and it was a very good addition.
