Description

A meal for one!

Ingredients

  • 1 cup Quinoa
  • 1 whole Red Pepper
  • 1 whole Scallion, Chopped (white And Light Green Parts)
  • ½ cups Fresh Garden Peas
  • ½ cups Garbanzo Beans(canned)
  • ¼ cups Your Favorite Salsa
  • 1 Tablespoon Sriracha Sauce
  • ½ cups Mexican Shredded Cheese
  • Salt And Pepper

Preparation

Cook quinoa per package instructions. Cut the pepper in half lengthwise and take out seeds. Set pepper halves aside. Preheat oven to 350 F.

In a large bowl mix together chopped scallions, peas, quinoa, garbanzo beans, salsa, Sriracha sauce, shredded Mexican cheese, salt and pepper (to taste). Stuff peppers with mixture, put them in a baking dish and bake at 350 F for 30-40 minutes. Enjoy!

Easy to make and quite yummy. I made a slight variation by using hot salsa and omitting the Sriracha Sauce. Added a little extra salsa when serving as well. Very good :)
