Description

Delicious spicy black bean burgers.

Ingredients

  • FOR THE SALSA:
  • 2 cans Diced Tomatoes With Green Chilies (10 Oz Cans)
  • 1 cup Corn, Fresh Or Frozen (if Frozen Defrost First)
  • 3 Tablespoons Cilantro, Chopped
  • 1 pinch Salt
  • 1 whole Lime, Juiced
  • 1 whole Red Pepper (small), Stem And Seeds Removed Then Chopped
  • ½ whole Red Onion, Chopped
  • 1-½ whole Avocado, Peeled, Pitted And Cut Into Wedges
  • 1 teaspoon Chili Powder
  • ½ teaspoons Cumin
  • FOR THE BURGERS:
  • 2 cans Black Beans (10 Oz Cans), Drained And Roughly Mashed Or Blended
  • ½ cups Bread Crumbs (up To 3/4 Cups)
  • 1 whole Egg
  • 2 Tablespoons Sunflower Seeds
  • 1 teaspoon Sesame Seeds
  • 1 pinch Salt To Taste
  • 1 pinch Pepper To Taste
  • ½ teaspoons Cumin
  • 1 teaspoon Chili Powder
  • 2 Tablespoons Hot Sauce
  • ¾ cups Corn, Fresh Or Frozen
  • 1 whole White Or Yellow Onion (small), Chopped
  • 1 whole Green Pepper (small), Stem And Seeds Removed Then Chopped
  • 2 Tablespoons Cilantro, Chopped

Preparation

For the salsa:
Combine all ingredients in a bowl, mix well and chill until serving. Top with extra cilantro for garnish.

For the burgers:
Mash/process black beans and put them into a large bowl. Add 1/2 cup breadcrumbs, egg, sunflower seeds, sesame seeds, salt, pepper, cumin, chili powder and hot sauce. Mix and then add corn, onions and peppers. If the consistency of the mixture is still too moist add more breadcrumbs until you are able to form patties (mixture will still be soft so don’t make it too dry, I would err on the moist side). Add cilantro just before forming patties of your preferred size.

Cook patties in a skillet on the stove top or on the grill over medium heat until both sides are darkened (about 10-15 minutes total).

Top burgers with avocado slices and salsa or mole and enjoy!
