Description

A easy Veggie Chili from my cooking club. Also works with with ground beef or turkey.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 2 cups Chopped Onions
  • ½ cups Chopped Yellow Pepper
  • ½ cups Chopped Green Pepper
  • 2 cloves Minced Garlic
  • 1 Tablespoon Brown Sugar
  • 1-½ Tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 cans 16 Oz. Stewed Tomatoes, Undrained
  • 2 cans 15 Oz. Black Beans, Drained & Rinsed
  • 1 can 15 Oz Kidney Beans, Drained & Rinsed
  • 1 can 15 Oz Pinto Beans, Drained & Rinsed

Preparation

Heat oil in dutch oven (or large pot) and saute onion, peppers and garlic until tender. Add sugar, spices, tomatoes and beans. Bring to a boil, then reduce and simmer for 30 minutes.

Serve with sour cream and grated cheese.

Freezes well.

Enjoy and pass the Beano!

(I like to serve chili with sour cream and grated cheddar cheese. You can also add tortillas, chips, and if you need to make it non-vegetarian, it would be easy to stir in some ground beef or turkey.)

Simple yet delicious. I loved the bean mixture. I had it with Jiffy cornbread muffins. It would also be great over rice with some Nan on the side

This was my first Tasty Kitchen recipe that I dared to try, and I have to say that it didn’t leave me disappointed! However, it felt more like a vegetarian stew than a chili… maybe I didn’t chop the veggies enough? However, it did need more liquid, so I added another can of tomatoes, and most of a Yuengling beer. After simmering that, and adding (a lot) more spice, it held up well.

This is one of the best chilis we’ve eaten in a long time! I added more garlic and chili powder and used red peppers instead… yum! Thanks for the recipe!

This is a wonderful recipe! So tasty and easy too. I added a few chopped adobo chilis to give it a smokier flavor. We’ll definitely have it again.

This was very good and simple to prepare. The seasonings were just perfect and to add a little bit of heat I added just a pinch of cayenne pepper. If your in the mood for a great bowl of chili, I definitely recommend trying this recipe!
