Description

Cheesy vegetarian patties packed with protein and hearty grains.

Ingredients

  • 1 cup Quinoa
  • 6  Eggs, Beaten Lightly
  • 1 can Chickpeas, Drained And Coarsely Mashed (10 Oz Cans)
  • ½ whole Large White Onion, Chopped
  • ½ cups Chives, Chopped
  • 1 cup Whole Wheat Seasoned Bread Crumbs
  • 1 dash Salt
  • 1 teaspoon Cumin
  • 1 Tablespoon Sesame Seeds
  • ½ cups Grated Parmesan Asiago Cheese
  • ⅓ cups Gruyere Chese Grated
  • 1 Tablespoon Extra Virgin Olive Oil

Preparation

Preheat oven to 400 F.

Cook quinoa as directed on package (my package said to bring 1 cup quinoa and 2.5 cups water to boil, reduce heat and simmer for 10-15 minutes or until all water is absorbed.)

In a large bowl combine the cooked quinoa, eggs and mashed chickpeas.
Add onion and chives. Add breadcrumbs, salt, cumin, garlic sesame seeds, cheeses and olive oil. Mix well and make sure mixture is moist. If not add more egg or water. If too moist add more breadcrumbs.

Form mixture into small patties and place on a well-greased baking sheet. Bake in oven for 15-20 minutes or until tops are golden brown, then flip and cook additional 5 minutes.

Serve in a pita with hummus, tabouli and tahini on top.

This sounds AMAZING! I LOVE falafel, but this sound a lot healthier, definately going to try this one!
