Description

Cauliflower steak with curry potato mash is a favorite of mine. It might sound starchy but it is far from it. This healthy meal gives you great vegetarian flavor while filling you up. A healthy cauliflower steak with a potato mash will let you eat right and low-fat with practically no cholesterol.

Ingredients

  • 2 whole Potatoes
  • 1 cup Milk
  • 2 Tablespoons Olive Oil, Divided
  • 2 teaspoons Salt
  • 2 teaspoons Ground Black Pepper
  • ½ whole Shallot Finely Minced
  • 1 teaspoon Curry Powder Masala
  • 1 head Cauliflower
  • 4 Tablespoons Vegetable Oil
  • 1 teaspoon Red Chili Flakes

Preparation

For the potatoes:
Wash the potatoes and peel. Boil until fork-tender.

While potatoes are warm, put them in a large bowl. Start to mash the potatoes, adding milk, 1 tablespoon olive oil, salt, pepper and finely minced shallot. Add curry masala powder and mix it all together. Put into a warm oven to keep warm.

For the cauliflower steak:
Use a sharp knife and cut the cauliflower, starting at the top, into 1 1/2-inch thick steaks. Baste cauliflower with vegetable or canola oil (or oil of your choosing). Sprinkle with salt, pepper and red chili flakes.

Add remaining tablespoon of olive oil to a skillet and heat to medium high heat. Lay the first side of the cauliflower down and cook for 3–4 minutes each side until golden brown. Cook the second side the same way,

Plate the potato mash and put the cauliflower steak on top of it.
