Description

The sweet flavor is a great complement to the spices in the beans!

Ingredients

  • 3 whole Sweet Potatoes, Cooked
  • 2 cans Black Beans
  • 1 Tablespoon Olive Oil
  • 1 whole Small Onion, Chopped
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Cumin
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Cayenne Pepper
  • 10 whole Flour Tortillias
  • 8 ounces, weight Shredded Cheddar Cheese

Preparation

1. Peel and slice the sweet potatoes. I roasted them for approx. 40 minutes so the sweetness came out more, but if you’d rather, you can boil them too.

Mash them up.

2. Puree 2 cans of black beans and set aside. I left some chunky, but do whatever you prefer.

3. Heat olive oil in a skillet on stove. Cook the chopped onions and garlic until soft. Add in the pureed black beans. To this, add the cumin, chili powder and cayenne pepper. Season to taste; add more if you like some heat!

4. Let the bean mixture cool.

5. Fill each tortilla with some of the mashed sweet potatoes, followed by a big spoonful of the bean mixture.

6. Add a handful of cheddar cheese to each, and roll up burrito-style.

7. Put on a cookie sheet and bake for 12 minutes.

These are fantastic served with fresh avocado, cilantro and sour cream. They can also freeze well in foil and are awesome reheated!

Made this for dinner tonight – very yummy and filling. Like others, I made quesadillas. Since it was just for me, I used one can of refried black beans that I had in the pantry, 2 smallish sweet potatoes, and added the juice of half a lime to the black bean mixture. It made enough that I’ll have two more meals from the leftovers.

So good! I didn’t expect to like the sweet potato mash in my burrito, but after it was broiled it was delicious! Thanks for a great recipe!

I made this last night, took jesusiscanadienne’s advice and tried it as a quesadilla – amazing! I used whole wheat tortillas also. The filling flavor was amazing, I think roasting the sweet potatoes made a big difference. Thanks for the delicious recipe!!

Very good! I took the previous reviewer’s idea and added some rice to the mix and it turned out great. They are very filling!

These are so delicious! I made them tonight, but added brown rice and cheese, as well as a couple of other spices. Just to let you know, I referenced to this page in my blog about them. Thanks for the awesome recipe idea!
