Description

Black Bean and Mango Tostadas are easy to make and everyone loves them!

Ingredients

  • 4 whole Corn Tortillas
  • 1 can (15 Oz. Can) Black Beans, Rinsed, Drained, And Heated Up
  • 1 whole Mango, Chopped
  • ½ whole Red Onion
  • 2 whole Tomatoes, Chopped
  • ½ bunches Cilantro, Chopped
  • 4 leaves Romaine Lettuce, Chopped
  • 1 whole Avocado, Chopped
  • 1 whole Lime, Cut Into Wedges
  • ½ cups Salsa

Preparation

1. Turn the broiler on high. Spray corn tortillas with cooking spray and sprinkle with salt. Place on a baking sheet. Put corn tortillas in the oven until crispy, about five-seven minutes. Flip them once to make sure each side is crispy.

2. Top corn tortillas with black beans, mango chunks, onion, tomatoes, cilantro, lettuce, and avocado. Dress with fresh lime juice and salsa.

These are wonderful! Thanks for sharing the recipe. I have a teenage daughter who is vegetarian and I am always on the look out for quick and easy, healthy and protein rich. She loved them and so did my husband and me. Delicious!

These are amazing. Simple, fast and absolutely delicious. I added some cojito because I believe in cramming cheese in wherever possible. Otherwise, a very healthy dish.

I made it last night. I couldn’t add avocado because the ones at the store were super hard. Still, it was perfect. I’ll be making some today also. Awesome recipe.
