I really loved these–even tho’ I’m not a big fan of burritos! I used canned sweet potatoes to save time and the overall taste of the dish is wonderful—-very complex with the ‘sweet’ potato taste and the spicy beans. My son suggested kicking up the spice by maybe
using a hotter pepper.

Wow! In addition to being a nutritional powerhouse (sweet potato & black beans), these burritos were delicious. Also, this recipe is very easy to make as a low-processed meal. It was spicy, but not too spicy. I had smaller tortillas on hand so I had a bunch of smaller burritos; I’m looking forward to trying this recipe with the burrito size tortilla. Great recipe that I will be adding to my regular menu schedule.

It’s easy to eat vegetarian when food is this good and simple. I made these burritos last night and loved their flavor and texture combination – the creamy sweet potatoes went really well with the slightly spicy beans! I also liked that this recipe makes 4 good sized burritos because we had them for dinner last night and now have leftovers for another night this week. I’ll definitely be making these again.

I amde these last night and loved them! Next time I think I’ll add some of the homemade taco seasoning (recipe on this site) but other than that they were perfect! Thanks for sharing

These were great. Even my husband who hates sweet potatoes ate these no problem. I had mine with some salsa verde which went perfectly with the burritos!

Absolutely incredible! Once a week or so I try to shake things up and go vegetarian for a meal and every single time my boyfriend is as cautious as I am excited. These were a huge huge hit. The combo of the sweet potato and spice from the beans was ridiculously tasty, and they were so filling. Thanks so much for posting this, I’ve found a new go-t0 for sweet potato season!

AWESOME!
I bought sweet potatoes for 10cents a pound today, and came home to look for a recipe for dinner. My hubby is gone for a couple nights, so I knew I could try something he might typically not like….THESE WERE AMAZING!
And, I really think he would like them!
I’m hoping the reheat well, since I made 7 of them, and it’s just me here! I think I could eat one every night this week though!

Make these! They are absolutely delicious! I doubled the recipe so I could have lunches and/or dinners for later in the week. Broiling them in the oven and getting that crunchy top really made these extra amazing. I will definitely add this recipe to my rotation – it’s easy and nutritious! I wish I was eating one right now…

The balance of flavor in these burritos is exceptional. I roasted the sweet potato in the oven and didn’t bother to mash. I also used some leftover Mexican rice and pepper jack cheese. I will be making these regularly for sure. Thanks for a wonderful recipe!

I love these! It’s amazing how well all the flavors go together! I didn’t make them spicy because I am a wimp, but they were perfect.

I’m looking forward to trying these! There was a great little spot in my college town that had the best potato burritos, I’d never even heard of them before that. And I would much prefer sweet potato to regular so this is really making my mouth water! Thank you for sharing xo

these were sooo good! Just delicious; a great combo of flavors. I was in a hurry so use canned yams instead of cooking the potato and that seemed to work out fine.

I used frozen cubed sweet potatoes and just steamed them and pureed them in a food processor with one chipotle and the taste went well with the rest of the ingredients! Super yummy! Thanks for a quick and easy vegetarian recipe. (I also make brown rice in large batches once a month and freeze it in 1 cup portions so that speeds up the dish
