Description

This recipe delivers a sweet yet light energy bar, which is vegan-friendly and gluten-free too!

The coconut and honey in this recipe gives it its sweetness, removing the need to add any extra sugar. You can indulge in these healthy treats any time of the day—have a bar for breakfast along with some fresh fruit, snack on one for your mid morning pick me up, or even have a slice with a cup of cocoa before bed time.

Ingredients

  • 4 ounces, weight Gluten Free Oats
  • 2 ounces, weight Almond Meal
  • 1 ounce, weight Slivered Almonds
  • 1 ounce, weight Desiccated Coconut
  • 1 ounce, weight Sunflower Seeds
  • 2 ounces, weight Raisins Or Dried Cranberries
  • 3 Tablespoons Almond Butter
  • 2 Tablespoons Honey
  • 3 Tablespoons Soy Milk

Preparation

1. Preheat the oven to 390ºF / 200ºC. Line a baking tray with parchment paper.

2. In a mixing bowl, combine the oats, ground and slivered almonds, coconut, sunflower seeds and raisins.

3. Meanwhile, in a small saucepan, over a medium heat, mix the almond butter, honey and soy milk until blended together.

4. Mix the wet and dry ingredients together, until all the oaty nut mixture has been coated and becomes sticky.

5. Pour mixture into the lined baking tray and spread out evenly using a wooden spoon.

6. Bake for 18 – 20 minutes, or until golden. Remove from the oven and leave to cool, then slice into 12 bars.
