Description

As a kid, I ate more of this at the Thanksgiving table than any other delicious food! As a diabetic adult, I’ve tweaked it to make it carb-friendly, and I still eat more of this than anything else at the Thanksgiving table! If you want to make it with regular Jello, just substitute that for the sugar-free Jello; all other ingredients are the same.

Ingredients

  • 1 box Large Sugar-free Strawberry Jello
  • 1 box Small Sugar-free Strawberry Jello
  • 3 cups Boiling Water
  • 1 bag Cranberries
  • 1 whole Navel Orange
  • 2 cans Pineapple Tidbits In Unsweetened Pineapple Juice, 8 Ounce Can
  • 1 cup Pecans, Toasted & Chopped

Preparation

1. In a 13×9 casserole dish, combine boiling water and strawberry gelatin packets.
2. Stir until gelatin is dissolved.
3. Pick over cranberries, discarding any that are shriveled or mushy.
4. Chop cranberries in food processor until quite small, but not pureed; add to gelatin.
5. Zest orange; add zest to gelatin.
6. Peel orange, and process until well-chopped; add to gelatin.
7. Add both cans of pineapple, with juice.
8. Stir pecans into gelatin.
9. Chill until firm and enjoy!

I made this for the first time Thanksgiving. It was a big hit! Going to a party tomorrow nite and plan on making it again. Very careful with my carbs and sugars and this let’s me not feel left out. Thanks for sharing.

I’ll have to try this for my Dad- he loves cranberry salad, but the one I usually make has 1 or 2 cups of sugar. Maybe he’ll like this, mine also has apples- would that make a difference- sugar wise ?
