Description

Sugar is replaced by stevia in this lowfat chocolate cake with peanut butter glaze.

Ingredients

  • FOR THE CAKE:
  • 1-¼ cup Oat Flour
  • ½ teaspoons Salt
  • 1 cup Stevia In The Raw
  • 1 cup Warm Water
  • ⅓ cups Unsweetened Dark Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Vegetable Oil
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Baking Soda

  • FOR THE GLAZE:
  • ½ cups Stevia In The Raw
  • 2 Tablespoons Unsweetened Cocoa Powder
  • 2 Tablespoons Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 2 Tablespoons Fat Free Milk
  • 2 Tablespoons Natural Peanut Butter

Preparation

For the cake:
Preheat the oven to 350°F. Put all of the ingredients in a bowl and stir until combined. Pour the batter into a loaf pan coated with cooking spray. Bake 40 to 50 minutes, rotating the pan about halfway through the baking time. When a toothpick inserted into the middle comes out clean, it’s done. Let the cake cool completely, and then top with Peanut Butter Glaze (recipe follows). Slice, serve, and try not to consume it all immediately.

For the glaze:
Combine all of the ingredients in a bowl and mix with a hand blender until the stevia is dissolved. If not dissolving, you can gently heat the mixture on low on the stove while stirring. Spread the glaze on the cake.

I looked up that specific stevia, it’s the kind that measures cup for cup, just like sugar.
