Description

Raw vegan “rice” like dish using cauliflower. Light and refreshing. Great summer lunch or side dish.

Ingredients

  • 3-½ Tablespoons Lime Juice
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Sea Salt
  • 1 dash Ground Pepper
  • 1-½ cup Corn, Frozen Or Fresh
  • 1 cup Red Bell Pepper, Diced
  • 1 cup Mixed Yellow And Orange Bell Pepper
  • 1 cup Yellow Summer Squash, Cubed
  • ½ cups Green Onions, diced
  • 1-½ Tablespoon Jalapeno Pepper, Diced (optional)
  • 1 cup Cilantro, Chopped
  • ½ heads Cauliflower, Roughly Chopped
  • ¼ cups Broccoli Florets, Sliced
  • 1  Avocado, Peeled, Pitted And Chopped

Preparation

For the dressing:
1. Whisk lime juice, olive oil, salt and pepper in a small bowl.

For the “rice”:
1. In large bowl, add corn, red bell pepper, yellow bell pepper, squash, green onions, jalapeno and cilantro.
2. Stir in dressing and let it sit for an hour.
3. In food processor chop cauliflower, pulsing until a rice-like consistency is reached.
4. Add cauliflower “rice” to the mixture and stir well.
5. Repeat step 3 with the broccoli florets and add them into the mixture.
6. Garnish with chopped avocado and serve. (Room temperature is best.)
7. Drain off excess water as it accumulates.
