Description

This is my absolute favorite banana bread recipe! The loaf is so easy, light , cake-like, naturally sweet and not to mention full of healthy ingredients! Plus it’s vegan and gluten-free! It is a regular on a weekly basis in my kitchen. I hope you enjoy!

Ingredients

  • 2 Tablespoons Ground Flax Seeds
  • 6 Tablespoons Water
  • ¾ cups Buckwheat Flour
  • ½ cups Rolled Oats
  • ½ cups Almond Flour
  • ½ cups Cocoa Powder
  • 2 Tablespoons Coconut Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 3 whole Ripe Spotty Bananas, Mashed, Plus 1 For Topping
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Apple Cider Vinegar
  • ¼ cups Smooth Tahini, Nut Butter, Or Melted Coconut Butter
  • ⅓ cups Mix-ins, Such As Chocolate Chips, Chopped Nuts, Dried Fruit, Fresh Fruit Etc.

Preparation

Preheat oven to 350ºF. Line a loaf pan with parchment.

Make flax egg by combing ground flaxseeds and water and letting it sit to gel up for 5–10 minutes.

Combine and whisk all dry ingredients in a medium bowl.

Combine and blend all wet ingredients until smooth, adding the flax egg last and blending again. Add wet ingredients to dry and fold to combine. Once mixed well, stir in any additional mix-ins.

Pour into prepared loaf pan and top with sliced banana (I like to simply peel and slice the banana right down the middle lengthwise to create two big sliced halves as seen in the photos).

Bake for 45–50 minutes or until an inserted toothpick comes out clean.

Note: If this recipe is not sweet enough for you, simply add an additional 2 tablespoons coconut sugar or maple syrup. But if your bananas are ripe enough, it should be perfect!
