These are so rich and chocolate-y with decadent notes of coconut and honey. There’s a pleasant crunch of almonds in each and every bite (textural heaven, really) and the glaze? Don’t even get me started. This dessert/snack is obviously healthy so it’s not overly sweet and won’t weigh you down. This proves by eating healthy you don’t have to compromise on flavor.
Preheat oven to 350ºF.
Melt together the coconut oil and honey in a large microwave safe bowl, whisking every 10 seconds until smooth and combined. Whisk in cocoa powder until combined. Whisk in the eggs one at a time, whisking to combine with each addition. Add the processed almonds, salt, baking soda, and vanilla and whisk until it forms a smooth batter-like mixture.
Pour into a lightly greased donut pan and bake for 15 minutes or until a toothpick is inserted and comes out clean (they will look underdone). Let cool completely before glazing.
For the glaze, melt together 3 squares of chocolate, coconut oil, and honey until it forms a smooth mixture (being careful not to scorch). Stir in the last chocolate square until smooth. Dip the donuts in the glaze one at a time, being very careful not to break the donuts. Top with toasted almond pieces and coconut.
