Description

Craving carbs? Cauliflower rice hits the spot and is the perfect rice substitute. Super easy, super healthy and super tasty!

Ingredients

  • 1 head Fresh Cauliflower, Cored
  • 2 Tablespoons Coconut Oil, Melted
  • 1 pound Frozen Peas And Carrots Combination (cubed)
  • 1 Tablespoon Tamari Soy Sauce (coconut Aminos If Soy Sensitive)
  • 1 dash Sea Salt

Preparation

1. Cut cauliflower into small florets so they will fit into a food processor.
2. Process the cauliflower in the food processor until it forms small rice-like pieces.
3. Add the coconut oil into a large pot and heat over medium heat. Add the cauliflower rice and let it cook on medium heat. Stir regularly to make sure it doesn’t burn.
4. Add the frozen carrots and peas to a pot of water and bring to a boil. Boil for about 5-10 minutes.
5. Drain the carrots and peas and add them into the cauliflower.
6. Add the tamari and salt to taste.
7. Cook for an additional 2-3 minutes and then serve warm. Enjoy!
