Fabulous! My husband loved it
I used a jar of salsa instead of the tomatoes (didn’t have any on hand) – it was great!

Absolutely delicious. Easy and quick to make. Not too tomatoey, not too brothy and very filling. Since there’s five of us, I doubled the recipe and good thing too–my 5yr. old had three bowls! : )

This was delicious and amazingly easy! I used petite diced tomatoes instead of whole, because that’s what I had on hand. I also added the spinach individually to bowls instead of into the large pot, because I didn’t want mushy spinach in my leftovers.
I WILL make this again- perfect weeknight meal that is quick, warm, & satisfying!

Excellent! This is the perfect soup for a weeknight dinner. I loved how fast and easy it was without sacrificing taste. I served it with my husband’s homemade cheddar-chive potato bread. Yum!

SO GOOD!! And not to mention super duper easy!! I added more stock and tortellini to ours so we’d have leftovers. We did and it was just as good on day 2!! Thanks for sharing. It sure is nice to have a quick and easy go to soup.

Very good. I made some changes to fit my taste–sauteed carrots and celery with onion then added garlic, eliminated the spinach (personal preference). I used fire-roasted diced tomatoes, which proved to be a good choice, and used Italian Seasoning (I had) instead of oregano (I didn’t have).
I doubled the recipe so I have some for lunch tomorrow. I’m so glad I thought ahead.
My whole family thanks you for sharing!

Any suggestions for a substitute for the spinach? Although I love spinach, I can’t have it for medical reasons.

Rachelcooks – Can you have Swiss chard? It has a similar taste and texture to spinach. (Just be sure to use green chard rather than red or rainbow chard or your soup will turn pink!) Kale would also be great, or any leafy green really.
If you need to avoid the leafy stuff altogether, you could add in some zucchini when you are cooking the onions. Actually, that sounds pretty darn good… I think I’ll try that next time! I hope this helps!
