Description

Plump tortellini and fresh spinach in a tomato-y broth. It’s quick and simple to make, and it packs a lot of flavor in every bite.

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • ½ whole Small Onion, Minced (about 1/4 Cup)
  • ½ teaspoons Dried Oregano
  • 1 quart Low-sodium Chicken Broth (or Vegetable Broth)
  • 15 ounces, weight Canned Whole Tomatoes
  • Salt And Freshly Ground Black Pepper
  • 9 ounces, weight Package Tortellini, Any Variety, Fresh Or Frozen
  • 3 cups Fresh Spinach, Chopped And Loosely Packed
  • Parmesan Cheese, To Serve

Preparation

In a large pot, heat the oil over medium heat. Add the garlic and onion. Cook until the onion is softened and the garlic has turned light gold, about 5 minutes.

Add the oregano, broth, tomatoes, and salt and pepper to taste. (You can break up the tomatoes with your fingers as you add them to the pot, or break them up with a spoon once you’ve added them to the soup.)

Bring the soup to a boil and add the tortellini. Cook according to the package directions.

One minute before the tortellini are done, add the spinach. Stir to combine.

When the tortellini are cooked, remove the pot from the heat immediately so they do not overcook. Season with additional salt and pepper, if necessary.

Serve the soup immediately, topped with grated Parmesan cheese.

I’m in love with this soup. This is my 2nd comment on it I think – but I have a question. Does anyone have a solution to stop the tortellini from BLOWING UP and absorbing all the liquid? I have made up the “soup” and then just added the tortellini as I warmed up the soup – but I made a big batch of it last night and went ahead and added the tortellini.

Since I first tried this soup it has become a weekly staple in our house. I’ve changed it up a little each time depending on what I’ve got, but it turns out tasty every time. Thanks for such an adaptable recipe.

Wonderful soup! We made it for our house and then a week later made it for friends! I’d give it 5 mittens if I could, but reviews seem to be closed.

This soup was very good! Quick and easy. Even my husband who does not like tomatoes loved it. One change I did make was I added 2 cartons of chicken stock, 1 tsp of oregano and
1 1/2 packages of 9 0z tortellini. It was awesome. I shared the recipe with other nurses at work. Hubby gave the OK to make this again.

I’ll make it again for sure, and probably change a couple things. DH didn’t like the tomatoes in it, chicken & mushrooms in it would probably be yummy too like pp said. My picky dd ate it, so that’s a plus.
