Description

A hearty, beany, flavorful, cheesy soup that is more like a chili. But better.

Ingredients

  • 2 pounds Ground Beef, Browned
  • 1 package (1 Oz. Packet) Ranch Dressing Mix
  • 1 package (1 Oz. Packet) Taco Seasoning
  • 15 ounces, weight Canned White Hominy
  • 15 ounces, weight Canned Pinto Beans
  • 15 ounces, weight Canned Southern Ranch Beans
  • 30 ounces, weight (2 15-oz. Cans) Kidney Beans
  • 10 ounces, weight Rotel
  • 8 ounces, weight Velveeta
  • 1 package Corn Chips, For Topping
  • 8 ounces, weight Sour Cream, For Topping

Preparation

Add everything (except sour cream and corn chips) to a slow cooker and set on high for 4 hours. Don’t worry about draining and rinsing the beans, just dump everything in. Serve over corn chips and add a dollop of sour cream on top.
