Description

This hearty soup is a standby for my family in cold weather and its simple preparation makes it a perfect choice for a weeknight dinner. Serve with warm, crusty bread.

Ingredients

  • 1 pound Sweet Italian Sausage
  • 1 cup Onion, Chopped
  • 1 clove Garlic, Chopped
  • 5 cups Beef Broth
  • ½ cups Red Wine
  • 2 cups Italian Stewed Tomatoes
  • 1 cup Carrots, Sliced
  • ½ teaspoons Dried Basil
  • ½ teaspoons Dried Oregano
  • 8 ounces, weight Tortellini

Preparation

Remove casings from the sausage and brown in a Dutch oven over medium heat with the onion, and garlic. You can break up the sausage as you go and cook the mixture until the sausage is no longer pink. Drain any excess grease. Add the broth, wine, tomatoes, and carrots. Increase heat to high until the mixture boils and then reduce to a simmer. Simmer together 20 minutes. Add the basil, oregano, and tortellini. Cook until the tortellini are done (according to the timing recommended on the tortellini package).

I am loving this soup!!! I used fire-roasted tomatoes instead, and a dry pesto mix for the spices. My 5 year old loved it!!!

This soup is AMAZING!!! Incredibly delicious and hearty! I highly recommend making a double batch so you have an excuse to have an extra large serving, and plenty of leftovers!

My husband and I loved this soup! There are some soups you can skip the red wine but the red wine in this soup just brought out such great flavor. I froze some and took it to work a couple weeks later for lunch and it was delish! Thank you!

I absolutely love this soup. I have made it twice now and it is so so so yummy. I usually serve it with french bread and a salad and it is the perfect meal for cold days!
