Description

Get the most out of your leftover turkey with this sweet and savory soup the whole family will love.

Ingredients

  • 1 teaspoon Olive Oil
  • 1 whole Yellow Onion, Chopped
  • 3 cloves Garlic, Chopped
  • 6 cups Homemade Chicken Stock
  • 2 cups Cubed Butternut Squash
  • 2 cups Cooked, Cubed Turkey
  • 1 cup Chopped Asparagus
  • 1 cup Sweet Corn Kernels
  • 1 can (8 Oz. Size) Mushrooms, Drained
  • 1 teaspoon (Bragg's) Season All
  • 1 teaspoon Jamaican All Spice
  • 1 teaspoon Salt
  • ¼ teaspoons Black Pepper

Preparation

In a heavy-based soup pot, heat oil over medium-high heat. Add onion, cook till golden brown. Add garlic, cook 1 more minute. Add stock and squash, cook for 10 minutes.

Add remaining ingredients, lower heat, cover and cook till heated through, about 7 minutes.
