Description

Creamy soup filled with chicken and wild rice.

Ingredients

  • 1 whole Large Onion, Chopped
  • 1 whole Large Carrot, Shredded
  • 2 whole Celery Ribs, Chopped
  • ¼ cups Butter
  • ½ cups Flour
  • 8 cups Chicken Broth
  • 3-½ cups Wild Rice, Cooked
  • 1 pound Chicken, Cooked And Chopped
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 1 cup Fat Free Eavoporated Milk (or Any Milk Product)

Preparation

In a large pan saute onion, carrot and celery in the butter until soft and tender, about 5 minutes. Stir in flour until blended. Slowly add broth. Stir in rice, chicken, salt and pepper. Bring to boil over medium heat. Cook for a few minutes until it starts to thicken. Stir in milk and cook for 3-5 minutes. Garnish with parsley or chives.
