Description

Did you ever have that one favorite dish where you licked the bowl clean? This is it!

Ingredients

  • ½ cups Chopped Onion
  • ½ cups Grated Carrot
  • ¼ cups Butter, Cubed
  • ¼ cups All-purpose Flour
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1-½ cup 2% Milk
  • ¾ cups Chicken Broth
  • 2 cups Cooked Chopped Fresh Or Frozen Broccoli
  • 2 cups Shredded Cheddar Jack Cheese

Preparation

In a small saucepan, saute onion and carrots in butter until tender.

Stir in the flour, salt and pepper until blended; gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

Add broccoli. Cook and stir until heated through. Remove from the heat; stir in cheese until melted.

Garnish each serving with more cheese.

Creamy and DELICIOUS!! What a great idea to cook the broccoli before putting it into the soup – it takes no time to make this soup! When I took the spoon out of the pot, the cheese pulled off in “strings” kind of like it does on really good nachos. Serve this with a nice loaf of bread: you’ll want to wipe the bowl clean with it! This recipe’s a keeper.

Yummy! I didn’t realize how easy it was to make a nice, creamy soup. Will definitely make this again!

Yum! I had a bag of broccoli and cauliflower, so I used that and added garlic. I also halved the amount of cheddar but subbed in a chunk of cream cheese. My kids asked for thirds of this. :) Making it again tonight, actually!
