Description

This is my favorite all time salad: it’s quick, easy low calorie and it reminds me of summer. The vinaigrette is fast to make, super low in calories, made with fresh strawberries and shallots. It goes beautifully with the salad.

Ingredients

  • FOR THE SALAD:
  • 2 cups Fresh Spinach Leaves
  • 2 ounces, weight Chicken, Cooked, Sliced
  • ½ ounces, weight Feta Cheese (light)
  • 1 Tablespoon Slivered Almonds
  • 4 whole Strawberries, Sliced
  • FOR THE VINAIGRETTE:
  • ⅔ cups Strawberries, Sliced
  • ½ whole Shallot, Chopped
  • ¼ cups Balsamic Vinegar
  • 2 teaspoons Fresh Thyme
  • ¼ teaspoons Ground Pepper
  • 1-¼ teaspoon Dijon Mustard
  • ¼ cups Water

Preparation

On a plate, place all the salad ingredients.

To make the strawberry vinaigrette, place dressing ingredients in a blender and process until smooth. Makes 1 cup dressing. Store in the refrigerator for up to a week.
