Yummy! I used soba noodles, and even sautéd the veggies with the sauce to warm it up on a chilly day! It was great! Definitely a keeper!

This was pretty tasty! I followed Stephanie’s advice and sauteed the veggies a bit. I cooked chunks of chicken on the stove in some oil, garlic and ginger. Once it was done, I cooked the veggies in the same pan. I used linguine instead of soba noodles. I will make this again!

Ridiculously good. I love the dressing for this. I did saute my veggies first and I put extra peanuts in mine. I’ve made it two weeks in a row for lunch now!

I cooked the veggies with the pasta for the last few minutes of cooking time. I think the vinegar should be rice vinegar.

I thought this was great. I steamed the veggies while the noodles were cooking, and served it warm for dinner. My husband loved it as well.

I thought about cooking the veggies as others stated since I was making this for dinner, but opted not to on a warm night, and loved the crispiness the raw veggies gave. I subbed about 1/2 TB of the oil for sesame oil and couldn’t find a chili pepper for the dressing, so used about 3/4 tsp. of Srirachi sauce, yumm!!

I followed everyone else’s advice — sauteed the veggies and used linguine. My goodness, it was amazing! My first time making whole grain pasta that my husband liked. In fact, he said, “I could eat this every day for a month and not get tired of it.” Score!

I used Sesame oil instead of Canola Oil, and about a teaspoon of Srirachi sauce instead of the chili. Loved the recipe…very yummy flavour! Thank you!!

Yum! Made it tonight, and I too sautéed the veggies. I also used sesame oil in the dressing and rice vinegar for authenticity! Great way to get veggies inside my kiddos. I didn’t have a Thai chile, and one daughter doesn’t like spicy so the rest of us added sriacha at the table.

Looks delicious! Can’t wait to make ahead and try for one of our “still hot” evenings full of soccer and baseball practices. Throw in some edamame, too, maybe….

I would estimate the servings to be 4 rather than 6. Next time I will make a little more, use more pasta.
