Description

A fresh Thai noodle salad perfect for adult lunchboxes!

Ingredients

  • FOR THE SALAD:
  • 1 cup Julienne Red Or Yellow Pepper
  • 1 cup Shredded Or Julienne Carrots
  • 1 cup Shredded Zucchini
  • ½ cups Finely Chopped Broccoli
  • ½ cups Chopped Green Onions
  • 1 cup Chopped Or Shredded Cooked Chicken Breast
  • 8 ounces, weight Cooked Soba Or Whole Grain Linguine Noodles
  • Fresh Basil And Cilantro, For Garnish
  • FOR THE DRESSING:
  • 5 Tablespoons Soy Sauce
  • 2 Tablespoons Water
  • 2 Tablespoons Peanut Butter
  • 2 Tablespoons Canola Oil
  • 1 Tablespoon Vinegar
  • ½ Tablespoons Honey
  • 1 Tablespoon Fresh Ginger
  • 1 clove Garlic
  • 1 teaspoon Sugar
  • 1 whole Red Thai Chili Pepper, Seeds And Ribs Removed
  • ⅓ cups Peanuts

Preparation

Combine salad ingredients in a large bowl.

Puree dressing ingredients (except peanuts) in a food processor until smooth and creamy. Add peanuts last and process until just finely chopped. Pour over salad and toss well.

Top individual servings with fresh basil and cilantro!

Store in the refrigerator for up to 4 days.

I would estimate the servings to be 4 rather than 6. Next time I will make a little more, use more pasta.

Looks delicious! Can’t wait to make ahead and try for one of our “still hot” evenings full of soccer and baseball practices. Throw in some edamame, too, maybe…. :)

I love this recipe and have made it several times. It is great to have in the fridge for lunch. I find the dressing pretty salty so I add a little extra honey. I have made it with cashews instead of peanuts and that was great as well.

Easy, quick and tasty! I used regular linguine and made it with the raw veggies as written…I don’t regret it. Saved time & dishes and tasted great. Sriracha does work well if you don’t have a chile.

I like this warm so I also sauteed the veggies and served it hot. A definite keeper – really really good with whole wheat pasta. Usually not my favorite but this recipe makes even whole wheat pasta taste amazing. Great recipe – definitely will make this again.

Great recipe! I used rice vinegar instead of regular and instead of thai chili I used siracha hot sauce (it’s what I had), and everything came out great! I also put the hot pasta on top of the veggies for a little while so they could soften. Thanks for sharing!

Delicious!
I cooked some chicken on the grill and served it on the side of this salad, and I also gave the veggies a quick saute’ – but the dressing was excellent.
