Description

This salad is super easy to make with minimal ingredients, but is so delicious it almost tastes sinful! The flavors and textures are reminiscent of my favorite salad from Panera — the Fuji Apple Chicken Salad. Yum.

This recipe serves one, but can be easily multiplied to feed two or even a crowd.

Ingredients

  • 4 cups Lettuce Or Mixed Baby Greens, Loosely Packed
  • 4 ounces, weight Grilled Or Cooked Chicken Breast
  • ½ whole Crisp Pear, Thinly Sliced
  • 1-½ Tablespoon Dried Cranberries
  • 1-½ Tablespoon Coarsely Chopped Pecans
  • 2 Tablespoons Trader Joe's Champagne Pear Vinaigrette
  • ¼ cups Crumbled Feta Or Blue Cheese (optional)

Preparation

Arrange lettuce greens on a plate. Arrange chicken on top, add the pear, and sprinkle with cranberries and pecans.

Drizzle vinaigrette over the top of the salad just before serving.

Add other vegetables to the salad base as desired, such as cherry tomatoes, thinly sliced cucumber, radishes and red onion.

The Champagne Pear Vinaigrette is out of this world delicious, but any other champagne vinaigrette would probably be a fine substitute.
