Description

Quinoa salad inspired by a trip to Mexico, with a starring secret ingredient: cinnamon!

Ingredients

  • 1 cup Quinoa
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • ⅛ teaspoons Cayenne Pepper
  • 1 pinch Salt And Pepper
  • 1 whole Lime, Zest And Juice
  • 1 dash Tabasco To Taste
  • 2 cups Cold Water
  • 1 whole Avocado, Sliced
  • 3 whole Tomatoes, Sliced
  • ¾ cups Canned Or Frozen Corn Kernels
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • ½ cups Feta Cheese, Cubed
  • 3 Tablespoons Finely Chopped Cilantro

Preparation

Rinse the quinoa thoroughly and put in a pot with cinnamon, nutmeg, cayenne, salt and pepper, lime zest and juice, Tabasco, and cold water. Bring to a boil, cover, reduce to a simmer for 15 minutes. Remove from stove and let sit for 5 more minutes. Fluff with a fork. Add the remaining ingredients and toss. Enjoy!

This sounds great. I’ll have to try it soon! I love quinoa but have only made it in broth before.

Made this yesterday and it was soooo yummy! I added extra lime juice (from concentrate) because I really enjoyed the taste. Thanks for the recipe!!

I made this tonight and loved the combination of flavors. We didn’t have any tabasco, so I used hula girl, and it still added a bit of a kick.

I made this for dinner this evening and it was fabulous! I did add some minced red onion and served it on baby spinach, which I thought helped to develop the flavours just that little bit extra. Regardless of that, the flavours complemented each other so well that I went back and got seconds. I’ll definitely be making this again!

I fixed this last night as a side dish to chicken tacos. It was fabulous! The cinnamon added an unexpected depth next to the lime and cayenne flavors. I’ve eaten quinoa but never cooked it before. This was a great way to start!
