Description

Wonderful lunch or supper option for two!

Ingredients

  • 2 cups Baby Kale
  • 2 Tablespoons Oilve Oil
  • 1 teaspoon Black Pepper
  • 2 whole (about 4 To 6 Oz. Size) Salmon Fillets, Preferably Fresh, Or Thawed If Frozen
  • 2 Tablespoons Pure Honey
  • 1 teaspoon Old Bay Seafood Seasoning
  • 2 slices Thick Red Onion
  • 1 whole Meyer Lemon, Juiced
  • 2 Tablespoons Sweet Cream Butter, Melted

Preparation

Prepare grill or griddle pan with cooking spray (we use an outdoor grill) and set on medium high heat.

In a bowl, add baby kale, a drizzle of olive oil, and black pepper. Mi well with clean hands. Grill for 2–3 minutes, turning once. Remove to a large platter.

Lay salmon fillets, skin-side down, on a clean surface. Brush honey on each fillet, sprinkle with Old Bay seasoning, and place on the grill, skin-side down. Grill 4–5 minutes each side, or longer depending on your preference. Add the thick slices of onion and grill a few minutes. Transfer fillets and onions to the platter with the kale.

In a small microwave safe ramekin, add lemon juice and butter. Microwave 30–45 seconds to warm and stir to combine.

To serve, divide grilled kale between plates. Add grilled salmon fillet on top, grilled onion, and drizzle with lemon butter. Dig in!
