Description

I’m not sure what I love most – the grapes, toasted pecans or the fact that I can eat it on a big fat croissant!

Ingredients

  • FOR THE SALAD:
  • 1 whole Rotisserie Chicken Shredded, Light And Dark Meat {approximately 4 Cups}
  • 2 stalks Celery, Chopped
  • 1 cup Small Red Grapes {halved If Large}
  • 2 ounces, weight Pecans, Toasted And Coarsely Chopped
  • FOR THE DRESSING:
  • 1 cup Mayonnaise
  • 6 teaspoons Honey
  • 4 teaspoons Apple Cider Vinegar
  • 1 teaspoon Poppy Seeds
  • 1 pinch Kosher Salt To Taste
  • 1 pinch Black Pepper To Taste

Preparation

Measure and mix dressing ingredients together in a bowl. Taste and adjust seasoning if needed. Set aside.

Combine salad ingredients, then pour the dressing over top. Toss and refrigerate for at least an hour before serving.

Serve this salad on a buttery croissant or on a bed of romaine lettuce leaves!

To toast pecans; place them in a dry pan over medium heat, tossing occasionally until fragrant.

Depending on how you choose to serve this could yield different serving amounts.

The dressing makes this shine. I did not use the poppy seeds, don’t think it was missed. The balance of acid and sweet in the dressing makes it a home-run. I served it on endive leaves and crostini’s. Nice addition to a lovely ladies brunch. Thank you.

This was pretty good. I didn’t care for the dressing until I added in some curry powder, and then it was yummy.

I make a lot of chicken salads & this was a great one! Next time, I might add another teaspoon of honey & vinegar each because the tang was a bit subtle for me. Thanks so much for sharing!
