Description

Using a mandoline to cut the zucchini and onion completely changes the texture of this simple salad. Add the champagne vinaigrette for a light and refreshing side salad.

Ingredients

  • FOR THE DRESSING:
  • 4 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Champagne Vinegar
  • 1 Tablespoon Lemon, Juiced
  • 1 Tablespoon Minced Shallot
  • 1 dash Salt And Pepper
  • FOR THE SALAD:
  • 1 whole Zucchini
  • ¼ whole Red Onion
  • 4 cups Butter Lettuce
  • 1 cup Cherry Tomatoes, Sliced In Half
  • 2 Tablespoons Walnut Halves

Preparation

Prepare the vinaigrette by whisking all ingredients together in a small bowl.

Set mandoline to smallest setting and thinly slice the zucchini and red onion. Add all of the salad ingredients to a large mixing bowl and toss with vinaigrette. Serve in individual salad bowls.
