Description

Refreshing chicken salad with fresh blueberries, dried cranberries, and a hint of lemon.

Ingredients

  • 3 pounds Fresh Skinless, Boneless Chicken Breast, Cubed
  • 2 cloves Garlic
  • Salt And Pepper, to taste
  • 1 whole Apple, Chopped
  • 1 cup Walnuts, Chopped
  • 2 stalks Celery, Chopped
  • ½ cups Red Onion, Chopped
  • 1 cup Dried Cranberries
  • 1-½ cup Mayonnaise
  • 1 cup Lemon Yogurt
  • 1 pint Fresh Blueberries

Preparation

Saute chicken and garlic in a skillet. Add salt and pepper to taste. While this cooks, chop the apple, walnuts, celery, and onion and place in a large mixing bowl.

Once the chicken is cooked, remove from heat and shred or chop into small pieces. Add to bowl.

Add cranberries, mayonnaise, lemon yogurt and stir everything together. Finally, mix in the blueberries, careful not to mash them.
