Description

We LOVE Mexican food, but sometimes good-looking bell peppers can be hard to find. So I came up with this quick and easy alternative that is just as tasty.

Ingredients

  • 1 pound Ground Beef Or Turkey
  • 1 teaspoon Johnny's Seasoning Salt
  • 1 teaspoon Ground White Pepper
  • 1 Tablespoon Ground Cumin
  • 1 dash Sea Salt
  • 2 packages (about 6 Oz. Package) Lipton Spanish Rice (or About 4 Cups Prepared)
  • 16 ounces, weight Frozen Bell Pepper Strips
  • 2 cloves Garlic
  • 2 whole Jalapeños (diced, Optional)
  • 7 ounces, weight Diced Green Chilis (optional)
  • 2 cups Shredded Cheese (whatever Kind You Like)

Preparation

I start by browning the hamburger and seasoning it with Johnny’s Seasoning Salt, white pepper, cumin, and a dash of sea salt.

Once it’s about halfway browned, I start making the Spanish rice according to the package directions. Sometimes I add a little cumin to this too while it’s cooking. (I would love to make my rice from scratch, and I’m sure could improve the end result of this recipe, but I don’t have the time.)

At the same time, add the bell pepper strips, garlic, jalapeños and green chilies to the ground beef to sauté them in the grease. If you choose to use ground turkey, you can sauté them in about a tablespoon of olive oil and then add the turkey to them.

I mix the Spanish rice into the meat and peppers. Let it simmer a few more minutes on low heat to let the flavors mingle.

I serve this in bowls and top each one with shredded cheese. Pick your favorite one or make a blend.
