Loaded with light and fresh flavors, Chicken Pho is a fun twist on the same-old-same-old bowl of chicken noodle soup. The broth is best made ahead of time, in either a slow cooker, or on the stove top. Then allow it to cool completely and skim off any congealed fat. The poached chicken and rice noodles can also be made ahead for time saving purposes.

Sweet Potato Foil Packet Tacos

Recipe Description

Taco – tortilla + sweet potato cubes = a gluten-free alternative to tacos that your kids will adore!

Preparation Instructions

Preheat oven to 425ºF.

Brown ground meat in a skillet over medium-high heat. Stir in taco seasoning, tomato sauce, and beans. Set aside.

To assemble packets, spray the foil with non-stick spray. Place 1 cup sweet potato cubes in the center of each piece. Top with a small piece of butter (about 1 teaspoon) and a pinch or two of salt. Sprinkle some chopped spinach over the sweet potatoes, followed by about 1/3 cup of taco meat and a sprinkle of cheese. Fold the sides in, then bring the top and bottom ends of the foil together in the center and fold, sealing the packet.

Repeat with remaining ingredients, placing the packets on a rimmed cookie sheet. Bake for 25–30 minutes, until the sweet potatoes are tender.

Serve with sour cream, salsa, and/or guacamole.

Makes 6 servings.

Note: For the taco meat, I used some leftover Hidden Veggie Chipotle Taco Meat I had in the fridge (recipe in my TK box).

2 Tablespoons Taco Seasoning
½ cups Tomato Sauce
1 can (15 Oz. Can) Black, Kidney, Or Pinto Beans, Drained
6 cups Sweet Potatoes, Peeled And Cut Into 1/2-inch Cubes
2 Tablespoons Butter
½ teaspoons Salt
1-½ cup Chopped Fresh Spinach
1-½ cup Shredded Cheddar Cheese
Sour Cream, Salsa, And/or Guacamole For Garnish

I loved this recipe! I changed it a little to suit what I had on hand: left out the meat, added mushrooms, used an entire packet of taco seasoning. I also baked it in a foil covered casserole dish instead of packets. Being in a deeper dish, I upped the cooking time to 45 min at 425 degrees. All in all, a great recipe, that even my veggie-phobic husband liked! Will definitely make again.

I did the same as robni, baking it in a 9×13 pan covered with foil. I also used Natalie’s Hidden Veggie Chipotle Taco Meat recipe. Scrumptious! My children all loved it.

These are WONDERFUL! I thought the combination sounded a little strange but I tried it anyway, and I’m so glad that I did. I also made it in a 9×13 pan covered with foil instead of packets. So easy and yummy!

Ok, so I saw this recipe and on a whim, I thought I would try it. Hubby was very apprehensive but I told him we had leftovers if he didn’t like it. We never touched the leftovers! The kids, ages 9, 11, 19 and 22 all kept saying “This is so weird!” while shoveling in and getting seconds and thirds. Hubby just looked at me and said “Make this again!”. So, needless to say, it will be on the regular rotation. The flavors are so interesting together – the seasonings from the taco meat and the sweetness of the sweet potatoes are just SO different! I just wish there were leftovers!
