Description

Shepherd’s Pie is quick easy and comforting! And it’s perfect if you have leftover mashed potatoes you are looking to use up from, say, Thanksgiving! This savory pie is always a crowd pleaser around my house!

Ingredients

  • 2 pounds Lean Ground Beef
  • 1 cup Chopped Onion
  • 1 can (10.75 Oz. Can) Campbell's Tomato Soup
  • ½ cups Ketchup
  • 2 Tablespoons Worcestershire Sauce
  • ½ teaspoons Red Curry Powder
  • 1 teaspoon Chili Powder
  • ¼ teaspoons Marjoram (generous)
  • ¼ teaspoons Coriander (generous)
  • ¼ teaspoons Rosemary (generous)
  • Salt And Pepper, to taste
  • 2 cups Frozen Peas, Corn, Or Green Beans (Your Preference)
  • ¾ cups Sharp Cheddar, Shredded
  • 4 cups Leftover Mashed Potatoes (See Note)

Preparation

Preheat oven to 350 degrees.

1. Brown ground beef with chopped onion. Add soup, ketchup, Worcestershire sauce and spices. Cook over medium heat for 10 minutes, stirring occasionally. Add salt and pepper to taste.
2. Spread ground beef mixture in the bottom of an 8×11 or 9×13 inch baking dish.
3. Spread the frozen peas, corn or green beans over the ground beef. (It really depends on your preference as far as vegetables go.)
4. Fold shredded cheddar into leftover mashed potatoes. Spread mashed potatoes over vegetables. Place the baking dish in the 350-degree oven for 30 minutes.

Note: If you do not have leftover mashed potatoes you will need approximately 6-8 yukon gold potatoes, peeled, boiled and mashed. Add 3 tablespoons of butter, 1/2 cup whole milk, and season with salt and pepper to taste.

I made this last night. Great flavor from the spice combination. I added an additional can of soup, just because that was what I was used to as far as texture is concerned. A keeper!

OK, just tried this recipe and the family gave it two thumbs up. VERY easy and extremely tasty. I used corn b/c my youngest son isn’t a fan of carrots or beans. LOL! Thanks for sharing!!
