This recipe is one that I grew up with, it’s my Mother’s recipe. I never really knew roast could be fixed any other way nor did I think it would be as good if it was. To me this was the best.
Preheat oven to 300 degrees F.
Place oil in skillet over high heat.
Rub roast on all sides with garlic, salt and pepper. Place roast in skillet to sear, 2-3 minutes. Flip roast over and sear another 2-3 minutes. Remove from heat.
In a separate bowl, combine soups. Spread about 2 Tablespoons of soup mixture in bottom of a 9×13 baking dish, (a smaller baking dish is fine too). Place roast in baking dish. Pour remaining soup mixture over roast. Cover and bake for 2 1/2 to 3 hours or until internal temperature reaches 170 degrees. Remove from oven and let rest for 8-10 minutes. Roast should be fork tender. Uncover and serve.
