Momma’s Meatloaf

Description

Greatest meatloaf on earth. I double the ketchup/brown sugar sauce because it really adds an “oomph” to the loaf. (I hate the word “loaf.”)

Ingredients

  • 2 pounds Ground Beef
  • 1 cup Cheddar Cheese, Cubed
  • 2 whole Eggs
  • 1 whole Medium Onion, Diced
  • 1 Tablespoon Worcestershire Sauce
  • 1 cup Bread Crumbs, Plain Or Seasoned
  • Salt And Pepper, to taste
  • ¼ cups To 1/3 Cup Milk, Enough To Moisten
  • ¼ cups Ketchup
  • 1 teaspoon Yellow Mustard
  • 3 Tablespoons Brown Sugar

Preparation

Preheat oven to 350 degrees.

Prepare ingredients. Do not shred the cheese. Be sure to cube it so you have melted cheesy bites. It is key to the flavor of the “loaf” (still hate that word).

Mix beef, cheese, crumbs, eggs, onion and Worcestershire together in a large bowl, leaving out the milk at this stage. I use my hands to mix this; I feel it is the only way to know if it is all properly mixed without overdoing it. At this stage, it will be dry and crumbly. Add milk a little at a time until the meat comes together and is moist and easily able to stay in a “loaf” form (there’s that word again!).

Form the “loaf” (heehee) and place in a greased baking dish. Set aside.

Time for the sauce.

Mix ketchup, mustard and brown sugar in a small bowl. Pour over the meatloaf and spread evenly with a spoon/spatula. (I double the sauce because it is my favorite part!)

Bake at 350F for 1 to 1 1/2 hours depending on your oven (mine takes about 1 1/4 hours). Use a meat thermometer to check for doneness. (Don’t cut it open to check inside! If you cut it open, you’ll see oozing cheese, and although it will look yummy, if you need more time in the oven, all that cheese will end up a burned mess in the bottom of your pan!)

This meatloaf was a hit! We usually do the dried onion soup recipe but the kids in the family aren’t fans. I gave this a whirl and my son took one look at the melting cheese and skeptically asked “What is this yellow stuff??” As soon as I said cheese he dug in and didn’t stop until finished.

This is a great recipe!
I just made this for dinner and it is a hit.
I called hubby and told him to hurry home from work for a very delish’ meal. My 14month old loved it as well. This is awesome and this will be my meatloaf recipe for life!
Now go on and make this for dinner.

This is some of the most amazing meatloaf ever. Very simple and delicious! Sometimes I will make it in muffin tins instead of a loaf pan and it comes out just as good!
