Description

My kids came up with the name for this after I invented the recipe out of sheer desperation one night. They request it regularly! The flavors are somewhere between spaghetti and pizza. You can easily make this meal vegetarian by substituting a can of beans for the meatballs.

Ingredients

  • 2 whole Egg Whites
  • 1 cup Bread Crumbs, Plain
  • ½ cups Onion, Chopped Fine
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Pepper
  • 1 pound Ground Beef Or Turkey
  • 2 cups Bowtie Pasta
  • 3 cups Spaghetti Sauce
  • 2 cups Mushrooms, Sliced
  • 3 cups Fresh Spinach
  • 8 ounces, weight Cheese For Melting (mozzarella, Monterey Jack, Etc.)

Preparation

1. In a medium bowl, combine the egg whites, bread crumbs, onion, garlic powder, pepper, and ground meat. Mix well and form into small meatballs. Brown meatballs in a lightly greased skillet over medium heat until cooked through. Meanwhile, prepare pasta according to package directions.

2. Add spaghetti sauce, mushrooms, and spinach (you can use a box of frozen chopped spinach, thawed and well-drained, if desired) to the meatballs. Add water if necessary and saute until mushrooms are soft and spinach is wilted. Season to taste with salt and pepper.

3. Drain pasta and add to the meatball mixture. Add cheese. Cover. Turn heat to low and allow cheese to melt. Stir and serve.
