Description

Add some zing to meatloaf with a can of Rotel and Ree’s Restaurant Style Salsa.

Ingredients

  • 1 pound Grass Fed Lean Beef
  • 1 can 5 Oz. Can Evaporated Milk
  • 1 cup Ritz Cracker Crumbs
  • 2 Tablespoons Dried Minced Onion Flakes
  • 2 Tablespoons Worcestershire Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 can (10 Oz. Can) Mild Rotel Tomatoes, Drained
  • 2 cups Ree's Restaurant Style Salsa (Recipe Found Here At Tasty Kitchen)

Preparation

Preheat oven to 425ºF. Butter a large iron skillet and set aside.

Place beef in a large mixing bowl; use a meat fork to break apart beef. Add the evaporated milk and mix slightly. Allow mixture to stand for 5 minutes. Then add the cracker crumbs, minced onion, Worcestershire sauce, salt and pepper, and Rotel tomatoes. Mix until ingredients are well blended.

Use a half cup measure to scoop a generous portion of meatloaf mix and transfer it to the iron skillet. Usually, the meatloaf mix drops right out of the measuring cup and keeps its shape. Continue forming mini loaves in the iron skillet, allowing the loaves to barely touch each other. Top with Ree’s Restaurant Style Salsa.

Place skillet in the preheated oven and cook mini loaves for 25–30 minutes or until loaves are well done.

I’m usually not a huge meatloaf fan, but this sounds good!

I think this would be an excellent filling for stuffed peppers, too!

SUPER yummy! I used ground turkey in place of the beef and didn’t feel like whipping up some salsa so I just used the jar stuff. Using the ground turkey I had to increase the amount of cracker crumbs by ~1/3C. Also, I only used half the can of Rotel but I used the other half in my steamed rice. I can definitely say that this will be served in our house again! I love mini meatloaves since they cook so much faster. Thank you for such a great recipe!

I saw this when it was first featured and have been thinking about it ever since. I was finally able to make it tonight and it was excellent. I actually used very lean turkey burger and no one knew! I will absolutely make this again!
