Description

Grilled rump steak marinated in lemon and thyme after you cook it.

Ingredients

  • 1-½ pound Rump Steak (about 1in Thick)
  • ⅓ cups Extra Virgin Olive Oil, Plus Extra To Brush On The Steak Before Cooking
  • 2 cloves Garlic, Crushed
  • ½ whole Lemon, Zest And Juice (If Your Lemon Is Small, Use The Whole Lemon)
  • 1 Tablespoon Fresh Thyme
  • 1 teaspoon Sea Salt (or Half The Amount If Using Table Salt)
  • Pepper To Taste

Preparation

Heat a griddle pan or BBQ grill till searing hot.

Remove fat from around the edge of the meat, pat dry and then brush lightly with oil. Place on the griddle pan and cook for around 4 minuets per side for a medium rare steak (depending on the thickness, you may need less time for medium rare; we like ours very rare and only do about 2 minutes per side).

While the steak is cooking, place the oil, crushed garlic, finely grated lemon zest and juice, thyme leaves (removed from stalks) and salt in a shallow baking dish large enough to fit your whole steak. Season with pepper to taste and mix with a fork.

Once the steak is cooked, place in the marinade for around 4 minutes per side. Slice thinly and serve with salad or steamed greens using the marinade as a dressing.
