Description

It’s as simple as throwing some ingredients into a food processor, then into a bag with a nice sized flank steak to marinate and then onto a grill for charred perfection! Who doesn’t love easy?

Ingredients

  • FOR THE MARINADE:
  • 2 pounds Flank Or Skirt Steak
  • 1 whole Handful Of Fresh Cilantro
  • 1 clove Garlic, Smashed And Peeled
  • 1 whole Lime, Juiced
  • ⅓ cups Olive Oil
  • 2 teaspoons Honey
  • ½ teaspoons Cumin
  • ½ teaspoons Ancho Chili Pepper
  • ½ teaspoons Red Pepper Flakes
  • Kosher Salt And Black Pepper To Taste

  • FOR THE STEAK TACOS:
  • 2 pounds Cilantro Lime Marinated Flank Steak, Thinly Sliced
  • 1 package (about 10 To 12 In A Package) 6 Inch Flour Tortillas
  • 1 whole Batch Pico De Gallo (See My Recipe Box)
  • ½ heads Iceberg Lettuce, Shredded Or Sliced Thin
  • ¾ cups Monterey Jack Cheese, Freshly Grated

Preparation

For marinating the steak:

In a mini food processor; place the cilantro, garlic and lime juice and pulse quickly until chopped. Toss the remaining marinade ingredients (everything except the steak) in with the cilantro/garlic and pulse until combined.

Place the flank steak into a resealable bag or container with a tight fitting lid, pour the marinade on top and let the steak marinate for 30 minutes on the counter top, bringing the meat up to room temp before grilling it.

Grill the flank steak 6-10 minutes per side on medium-high heat. I found that on my grill, on medium-high heat, 6 minutes per side is good for a medium-well done steak.

For the assembly:

Heat up some warm soft flour tortillas (you can do this in the microwave or in a dry skillet over medium heat). Then, layer tortillas with thinly sliced strips of the Cilantro-Lime Steak, shredded ice berg lettuce, pico de gallo (see my recipe box) and top with shredded Monterey Jack cheese!

Could this work on chicken breasts? I have all these ingredients, except chicken instead of flank steak, and want to see if I can substitute for an exciting dinner…

Made this last night and it was SO good. Loved the flavors of the marinade on the steak. I will definitely be trying this on chicken and shrimp – I’m thinking kabobs on the grill!!!

Making these for dinner tonight…

It was an adventure trying to find ancho chili powder so I bought ancho chili’s and stuck them in the blender. Worked great. And I have ancho chili powder to spare for another time.

But now as the steaks marinade, I am wondering if my “handful” of cilantro is bigger than normal , because that is the greenest marinade ever. Hope it tastes better than it looks! ( it reminds me of old guacamole )

We are grilling our flank steak over a mesquite charcoal grill and they smell awesome! …

Ok..Now dinner is cleaned up, and every single bit of the flank steak is gone. I asked the family to rate it and it got between a four and a five every time.

Hubby would like a little more “zing”, but the steak was oh so tender! Thanks for a good recipe!

I loved the marinade for the steak. Very tasty. But I almost felt like the flavors got lost in the taco and it would be better just eating the steak alone with some rice and beans on the side. Still, really yummy and I will probably use this marinade again.

Well, I used chicken instead of steak. It was soooooo good. My husband who isn’t really a taco kinda guy, ate 5 of them. :) Has just the right amount of cilantro, honey and lime. Can’t wait to try it on some flank steak!
