Quick, easy, healthy and delicious side dish or main dish to get your daily dose of kale!
Boil lentils for about 20-25 minutes, until tender.
Heat oil in a big pot (since the kale is so voluminous, it’ll be easier to prevent a mess if you use a pot). Add onions and shallots and cook until translucent, about 5 minutes. Add garlic, kale, salt, pepper and curry powder. Cook for 2 minutes, stirring occasionally. Add lentils and lemon juice, continue to cook until kale is wilted (don’t overcook the kale—it should still be bright green). Lastly, stir in mango chunks.
