Description

Melt in your mouth corned beef with new potatoes and cabbage cooked in cream. Delish for St. Paddy’s Day!

Ingredients

  • 2 pounds Pre-packaged Corned Beef
  • 2 pounds New Potatoes
  • ¼ cups Butter
  • 1 whole Medium Head Of Cabbage, Cut Into Wedges
  • ¼ cups Light Cream
  • ½ teaspoons Salt
  • ½ teaspoons Freshly Ground Pepper

Preparation

I buy the prepared corned beef and follow the directions on the package. After it is made, we broil it with the fat side up until just slightly browned. Slice and serve with boiled new potatoes and the cabbage recipe below.

Melt butter in a large skillet. Add cabbage, cover and saute until slightly browned, 4-5 minutes. Carefully turn over and brown the other side, 3-4 minutes. Add cream (you can add more if needed) and heat until slightly thickened, 2 minutes. Sprinkle with the salt and pepper to taste. The cabbage turns so sweet cooking it this way. We always have this for St. Patrick’s Day.
