Description

Spicy and delicious, these burgers will please even the most finicky kids (or boys!).

Ingredients

  • 1 whole Jalapeno
  • 2 cloves Garlic
  • 2 cans (15 Oz.) Black Beans, Drained And Rinsed
  • 2 teaspoons Cumin
  • 1-¼ teaspoon Salt
  • 1 Tablespoon Ground Flax
  • 3 Tablespoons Water
  • ½ cups Panko Breadcrumbs
  • 2 Tablespoons Tomato Sauce
  • ½ cups Corn, Fresh Or Frozen And Defrosted
  • 1 Tablespoon Olive Oil, For Frying Burgers
  • 6 whole Hamburger Buns
  • Optional Garnishes: Avocado Slices, Sriracha Chili Sauce And Ketchup

Preparation

Seed and roughly chop the jalapeno. Add it and the garlic cloves to a food processor (or high speed blender) and mince finely. (Alternatively, you could chop them yourselves very finely but it’s just easier at this point to throw them into a food processor.)

Add one can of beans to the jalapeno/garlic mixture and pulse to combine. Add cumin and salt and pulse until mixture resembles chunky black bean dip.

In a small bowl, mix together the ground flax and water. Let the mixture sit for five minutes.

Transfer the mixture in the food processor to a large bowl and stir in the bread crumbs, tomato sauce, flax mixture and corn. Stir well until everything is combined. Add remaining can of black beans.

Heat a little olive oil in a skillet on medium high heat. Form black bean mixture into patties and fry for about 4 minutes per side, until golden and crusty brown.

Serve burgers with avocado slices, sriracha chili sauce and ketchup.

Melissa,
the flax acts as a binding agent instead of eggs! You could use one whole egg instead of the flax if you preferred.

They were so sticky :/.. it was really hard frying them. However, the flavor was great. My boyfriend said he enjoyed it.

These were good, a healthy opton. I agree with inneranomaly’s husband that they were a little pasty inside, but the flavor was excellent. Loved the jalapeno, but I’m a spice girl. Not a “Spice Girl.” You know what I mean :)

Loved these! Left out the jalapeno because it probably would’ve been a little too spicy for us, then served them with avocado and then a mixture of mayo and a little of the Sriracha chili sauce (sounds weird, but we use that combo in sushi sometimes). Delicious! I ended up making only 4 patties to fit my kaiser rolls, but they were probably a little too big because they wanted to fall apart. Even so, they still managed to hold together pretty well. These had a really great consistency, so I don’t think I’ll ever try one of the black bean recipes that call for cooked rice — too much work!

I love these, but my husband wasn’t crazy about them at all (the reason I only give it 4 stars instead of 5). Husband said it tasted like he was eating bean dip because of the texture and said he’d rather eat black bean salad if he’s going to eat that many black beans. I thought they were great, but I won’t be able to serve them for dinner due to hubby’s lack of enthusiasm. I have made them again to use for my lunches though! I’m not able to form them into patties (could be b/c I sub one egg for the flax/water?) but I cook in a skillet and spoon the mixture directly into the skillet, forming it into a patty as it cooks.

LOVE this! My husband who has is of the opinion that all meals should contain meat was shocked at how tasty this is. What is even better is this is such an easy, delicious way to get in some vegetables. Will be adding this to my recipe book for sure!
