Description

Easy to make, pipe, cook, and fill Whoopie Pie.

Ingredients

  • FOR THE CAKE:
  • 1 cup Granulated Sugar
  • ½ cups Shortening
  • 2 whole Egg Yolks
  • 2 cups Sifted Flour
  • 5 Tablespoons Cocoa
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Milk
  • 1 teaspoon Vanilla
  • _____
  • FOR THE FILLING:
  • ½ cups Mini Marshmallows
  • 1 Tablespoon Corn Syrup
  • ⅓ cups Shortening
  • 2-½ cups Powdered Sugar
  • ⅓ teaspoons Salt
  • 2 whole Egg Whites

Preparation

For the cake, cream together sugar and shortening. Add lightly beaten egg yolks until well mixed. Mix in dry ingredients, alternating with milk/vanilla mixture. Pipe or spoon in circles on parchment paper and bake at 375 degrees for 8 minutes.

For the filling, in a saucepan on medium heat, melt marshmallows and corn syrup until a liquid mixture is achieved. Cream with shortening in a mixer on medium speed. Slowly add powdered sugar and salt, mix well. Finally add egg whites and beat on high speed 2 minutes. Add more powdered sugar if needed. Pipe between two whoopie pie cakes.

These looked so cute and sadly, the creme middle didn’t set up at all after two attempts. It was so thin, even after refrigerating, that it was unusable. :(
