Perfect. I could eat just the filling on a spoon. You can find the wafer sheets online or in specialty stores (German/Polish).
Blend all ingredients (except wafer sheets) until very fluffy. Add more cream if needed to reach desired consistency. Spread onto a wafer sheet, top with another one. Wrap in foil and place a book over the wafer for an hour before cutting. Makes two large wafer sheets, cut into bite-size pieces. Enjoy!

The wafer sheets I bought are thin, but the thick ones should work just as well (they would be similar to nutty bar wafers). Mine were from a store that sells International food items, the brand is Wetzel. I know Amazon carries some wafer sheets, you could try those? I think they are the thick ones.

I would like to make these cookies, but I’m having a difficult time locating the wafer sheets online. I see references to tort wafers (thick), but they appear to be for cakes. Other references to wafer sheets don’t mention the thickness of their product. Could you please provide some additional information regarding the exact name of the product and the brand. Thanks!
